Pour cette exp\u00e9rience plusieurs morceaux de viande bovine ont \u00e9t\u00e9 s\u00e9lectionn\u00e9s. Les diff\u00e9rentes techniques utilis\u00e9es ont \u00e9t\u00e9 :<\/div>\n<div>le salage, le froid (au frigo), sous vide, \u00e0 l&rsquo;air libre (t\u00e9moin), pasteuris\u00e9.<\/div>\n<div><\/div>\n<div>Apr\u00e8s 3 semaines de repos, les \u00e9l\u00e8ves ont pu comparer l&rsquo;\u00e9tat des diff\u00e9rents morceaux de viande: au final seule la
